Quick and simple recipes – Spaghetti

Oh boy am I ever excited to share with you a great recipe like spaghetti. Now I’ve been cooking for as long as I can remember and I find myself constantly learning new way and ideas to make amazing and wonderfully simple foods such as spaghetti.

Keep in mind we’re going simple here, so this time we are not going to be making sauce or noodles from scratch. You’ll have to catch us on one of our regular shows to learn that but for now let’s get started, shall we?

 

You will need:

  • A box of spaghetti noodles (don’t worry we will be spicing them up a little.)
  • 2 cups of diced onions.
  • ½ cup of green pepper.
  • 4 tablespoons of minced garlic.
  • ½ bunch of fresh basil chopped fine, or 4 tablespoons of dried basil seasoning.
  • ½ cup of vinegar, I preferred the red wine vinegar but the regular vinegar works just as well.
  • A pound of ground beef 80/20 or 90/10, less oil run off from the meat then.
  • 3 tablespoons of chili powder.
  • 4 tablespoons of paprika.
  • 1 can of your favorite tomato sauce I go basic because I’m going to add my own flavors to it so I don’t want to over flavor.

 

For this recipe you will also need a frying pan and a large pot, and a decent size sauce pan, (It’s normally the one that has one long handle on it.)

Let’s get started shall we?

Get your frying pan hot by placing it on the stove at slightly above medium. Next you want to grab some of your green peppers and onions and place them in the frying pan. Don’t worry about the fact that there is no oil the meat will bring that to the party. Add a dash of salt more like a pinch with a hint of black pepper. Now what you want to do is add the ground beef by crumbling it into the frying pan with the cooking vegetables. Add in about 1 ½ tablespoons of paprika, and 2 tablespoons of chili powder. Add now ½ of the bunch of basil, or 2 tablespoons of the seasoned basil.  Allow your meat to slowly cook now by placing it on a lower temp. I’d say medium low or so. This is going to allow for the flavors to cook in and settle in your meat.

Grab your big pot and place water in it. Fill the pot to half full. Pour your vinegar into the water with about 2 tablespoons of onions, ¼ of the basil, and turn the stove for your water on medium high and allow the water to come to a complete boil. Once the water starts to boil place your garlic into the water. Now you want to place your spaghetti noodles into the water and allow them to get limber, but not over soft where they start falling apart. The noodles should have some firmness to them without being crunchy or sticking in your teeth. I would suggest stirring, and mixing quiet regularly.

Back to the meat for a moment drain the oil that’s in your frying pan and now place it the frying pan off to the side. Grab your sauce pan now and place it on the same eye that your frying pan once was on. Now pour your tomato sauce into the pan and let it come to slightly boiling temp. your stove for this pan should be on or about medium low to low right now. Once it begins to boil place your meat into the sauce and stir.

Now your noodles should be done, you will know like I said by testing them if it’s crunchy, or if they stick to your teeth they are not! If they are loose and yet with a hint of firmness you have hit your benchmark and now pull them off the stove. Just drain them DON’T rinse these noodles you want the flavors that they were cooking in to be present on these noodles.

A little side note at this time I would turn the temp. down to low as well and place a half stick of butter, 1 tablespoon of garlic powder, a little more basil or even a pinch of Oregano, and 3 tablespoons of vegetable oil in the empty noodle pan and allow that to mix and mesh. Place the noodles back into the pan and stir gently covering all your noodles with the now butter garlic sauce that is in the pan, and turn your stove off for both the meat and noodles!

Here’s the best part!!! Grab a plate and place a portion of noodles on it and then just drizzle a decent portion of your sauce over the noodles and wahlah there you have it!
