SHRIMP, or CHICKEN FRIED RICE

 

 

Chicken or shrimp fried rice

For this recipe we are going to use to basic and simple ingredients to make this dish and your mouth thank you for when it’s all said and done!

You will need:

  • 2 Cups of instant rice.
  • 1 Package of instant noodles (crush the noodles in the package before opening it.)
  • 2 Eggs or egg whites.
  • ¼ Cup of frozen peas and carrots.
  • And either 1 decent size boneless chicken breast or, 1 cup of small peeled shrimp.
  • 3 tablespoon of vegetable oil.
  • ¼ Cup or slightly less than chopped white onion. Optional.

Get yourself a non-stick frying pan and place it on the stove at a little bit above medium, remember we’re making fried rice so you need your pan to be fairly hot for this one. Add 1 ½ tablespoons of the vegetable oil into the frying and listen for it to start sizzle. Next you rinse off your chicken breast and place it in the frying pan.  What you want to do here is to get a nice sear on both sides. Once you got the sear on both sides place a little water in the pan and place the lid on it. We want to get the chicken about 40% done before we start the next process. Once we’ve reached that 40% mark you’re going to take it out of the pan and turn your stove down low for the time being and keep your pan on the stove. Next we need to dice the chicken into bite size pieces and place then back into your pan. Place the rest of the vegetable oil into the frying pan as well and turn your stove up to medium and place lid over it. While that is cooking scramble the eggs that you have with a pinch of salt and a dash of black pepper. Grab your onions and place the scrambled eggs and onions into the pan and stir frequently till eggs are cooked to medium scrambled. Allow the moisture to evaporate and pour the rice in leaving the top off, let sit for about a minute or two. Your frying pan should be dry for that process. Now you want to pour the rest of that oil in and stir. Open the package of Ramon noodles and empty the package into the pan as well minus the seasonings you will have the option to add later if you choose to. Stir frequently. Now grab yourself about two cups of water and pour a little portion in at a time while stirring. Remember that the rice is minute rice so it shouldn’t take long to cook. Once you start to smell the flavors from the frying pan you kinda know that you’re in the home stretch as your stomach starts it’s growling. (You can now if you so choose to add the season pack from the Ramon into your rice as an option. Taste the rice first to see if you want to add it in.)

Now you are going to want to place the peas and carrots into the pan and continue to pour a little more water into the pan. Turn the stove down to the notch to between medium and low. Place the lid and allow to simmer.

And there you have it. Now I didn’t forget for those who want shrimp just simply place a frying pan on medium with a little butter and oil. Allow to simmer place the diced onions, and shrimp into the pan after you hear it sizzle. Follow the fried rice recipe above and leave the shrimp off to the side and once you place the peas and carrots simply place the shrimp in as well at that time.
